Coconut Rice Pudding



Ingredients
  • 1 can coconut milk
  • 1 pinch salt
  • 1 star anise
  • 1 tbsp sugar (alternatively 1 small pack "vanilla sugar" per tbsp sugar)
  • ½ cup pineapple chunks, canned (fresh pineapple is even better!)
  • ¼ cup short grain white rice
  • 1 tsp vanilla extract
  • Optional
  • ½ banana, mashed
Instructions
  1. In a pot pour the coconut milk . Give it some heat - medium.
  2. Once the milk just starts to boil Stir in the rice. Reduce the heat to low! the fat will separate If the coconut milk is too hot from the rest and it wont smooth and creamy.
  3. Flavour things up with sugar, vanilla extract, anise salt and star.
  4. On low heat stir occasionally and let it simmer for about 30 minutes until things get well creamy. Cover the pot with a lid.
  5. Add 3-4 tbsp of pineapple juice If you use canned pineapple to the rice mix to give it a fruity kick.
  6. Serve with diced pineapple chunks.
